Beyond the “Clean” Label: Why Your Biryani Belongs on Your Plate
If you have ever tried to start a new health routine, you have probably been told to “eat clean.” It sounds simple enough. The problem is that this advice often comes with an invisible list of rules that splits the grocery store into “good” and “bad” camps. In many households, this means traditional, beloved dishes like biryani or parathas are immediately labeled as “dirty” or “cheat foods” that you have to apologize for.

The Subjectivity of “Clean”
The term “clean eating” is entirely subjective. Ask five different internet gurus what it means, and you will get five conflicting answers. Some say it means going gluten-free; others insist on raw organic plants, while some advocate for a meat-only carnivore diet.
From a scientific standpoint, “clean” is not a real nutrition category. As the source material points out, there are no inherently unhealthy foods, only unhealthy diets. Health is determined by the long-term, cumulative effect of your dietary choices over time, not by a single meal.
Furthermore, labeling common ingredients as “dirty” carries a high psychological cost. This style of eating encourages a highly rigid mindset, which has been shown to worsen a person’s relationship with food and can even lead to orthorexia, an obsessive fixation on food purity.
What the Research Actually Measures
So, what happens when researchers put food quality to the test?
Let’s look at a fascinating study by Bray and colleagues (2007). They compared a fast food meal, an organic beef meal, and a turkey sandwich meal. All three meals were precisely matched for calories and macronutrients.
When the researchers measured the participants’ hormonal responses over the next six hours, they found no differences in blood glucose, insulin, ghrelin, leptin, or triglycerides. The body processed the energy similarly because, at a metabolic level, a calorie is a calorie.
To take it to an extreme, consider the famous “Twinkie Diet” experiment conducted by Professor Mark Haub. For ten weeks, he ate under a calorie limit consisting primarily of Twinkies, Oreos, and sugary cereals.
Because he maintained a calorie deficit, he lost 27 pounds. His bad cholesterol (LDL-C) reduced by 20 percent, and his triglycerides dropped by 39 percent. While this is certainly not a template for a nutrient-rich lifestyle, it proves a foundational principle of nutrition science: fat loss is driven by energy balance, not food purity.
The Satiety Factor
If food quality does not change the laws of physics, why do we see people lose weight when they switch to whole foods?
The answer lies in satiety, how full we feel, and calorie density. This was demonstrated in a landmark clinical trial by Kevin Hall and his team in 2019. Participants were allowed to eat as much as they wanted on either an ultra-processed or an unprocessed diet. The meals were matched for presented calories, macronutrients, fiber, and taste.
The results were striking: participants consumed about 508 extra calories per day on the ultra-processed diet. The reason was not a metabolic “glitch.” It was calorie density.
Because the processed foods had an 85 percent higher energy density once supplemental fiber drinks were excluded, it was simply much easier to eat more energy in less time.
In other words, minimally processed foods are great because they keep us full and make it easier to manage our energy intake spontaneously. But that does not mean a processed ingredient is “toxic” or will automatically stop your progress.
The Danger of Rigid Dieting
Trying to eat “perfectly” often backfires. Research consistently shows that rigid dieting, restricting foods and having forbidden categories, is associated with a higher BMI, increased mood disturbances, and more frequent bingeing episodes.
On the flip side, flexible dieting is associated with lower levels of anxiety, less overeating, and better long-term weight maintenance. This was illustrated in a study by Loria-Kohen and colleagues (2012).
They put two groups on identical weight loss diets, but one group was allowed to eat bread while the other was not. The “no bread” group experienced lower adherence and significantly more dropouts.
When we apply this to traditional food cultures, the lesson is clear. Forcing yourself to cut out comforting, culturally rich meals, or feeling guilty when you enjoy a homemade paratha with a rich tarka, is a form of rigid dieting. It sets you up for a cycle of restriction and rebound.
Traditional dishes are not “cheats.” A well-prepared biryani offers high-quality protein, complex carbohydrates from rice, and healthy fats. A vegetable curry finished with a tarka provides essential micronutrients and fiber. These foods belong in a balanced life.
